Angie's Angels Are Among Us Cookies
aka Biscotti con Pignoli or Pinoli/Pine Nut Cookies
This is my most favorite cookie in the world. When we go to Italy, I stockpile these and bring them home! I have a problem sharing these cookies because that is how much I love them, this is an old family recipe for this traditional Italian Cookie.
1 pound almond paste
1 1/2 c Sugar
3 lg egg whites
1 1/2 c pine nuts/pinoli nuts
preheat oven to 350, grease or line (parchment paper) 2 cookie sheets
Crumble almond paste into mixing bowl, beat with hand held mixer until fine. Sprinkle sugar into almond paste and mix until incorporated. Beat in egg whites one at a time and continue beating until dough is smooth. Refrigerate dough, wrap in saran wrap for up to one day.
Spread pine nuts on a plate. Roll dough out and then break into cookie size balls. Roll top side of cookie on pinoli nuts. Place dough balls on cookie sheets and press down slightly to flatten. Bake until light brown, about 15 minutes & enjoy with a nice espresso machiato or glass of wine! Sta Bene!!!!!!!!
