Angie's back in the kitchen after the Pontani Sisters' whirlwind tour! Yay! In this "hurry up" world, it's often hard to find time to cook. If you don't have 3 hours to let a slow spaghetti sauce simmer, try this simple sauce!
Angie's Simple Sauce
Recipe serves 2 really hungry people!
Ingredients
two cans chopped tomato (or use lots of fresh ones!)
1 large bunch of basil
3 cloves of smashed and chopped up garlic
1/2 chopped white onion
1 tablespoon of olive oil
In a large frying pan with high sides, heat oil over a low flame. Add your garlic and your onions. Let them cook while you frequently stir for about 1 minute. Don't burn the garlic, if you do, start over.
In a food processor, puree your canned tomatos, use the liquid in the can as well. Let the tomatoes simmer for abour 3 minutes. Add this to the pan and let the tomatoes simmer for about 3 minutes. Now add a healthy handful of chopped basil and let simmer. Now add 3-4 whole but peeled cloves of garlis. They will roast themselves in the sauce... so amazing!
Let the sauce simmer for 20-30 minutes covered and 5 minutes uncovered if you need it to thicken!
Salt and pepper to taste!
Just add your favorite pasta and mangia! But don't forget a nice glass of red wine, too!
