Peekaboo’s Favorite Old Fashioned Meatloaf
I never liked meatloaf growing up, there was something unnatural about the whole ketchup and meat part for me. But now that I’m all grown up, it has become one of my favorite things to cook, and this recipe is not like the one I grew up with. It’s really yummy! Give it a try and it’ll take you on a trip back in time.
Ingredients
2 medium onions finely chopped
5 cloves of garlic minced
1 carrot chopped fine
1 stalk of celery chopped fine
1/2 cup of scallions – can substitute for extra onions
2 tablespoons butter
2 teaspoons kosher salt
ground pepper
2 tsp worschestershire sauce
2/3 cup ketchup
1 lb. of ground chuck
1/2 lb. of spicy ground pork sausage
1 cup fresh bread crumbs
*I always use the left over bread from the night before.
2 large eggs beaten
1/3 cup minced fresh parsley
Preheat the oven to 350 degrees.
In a large skillet melt the butter, then add the garlic and cook until fragrant: about 30 seconds. Add the onions, scallions, carrots, and celery. Cook over medium heat for about 5 minutes then cover and stir occasionally for another 5 minutes. When carrots are tender season with salt and pepper, add Worcestershire sauce and 1/3 cup of ketchup. Cook for another minute.
While the vegetables are cooking I work on the meat. In a large bowl add the meats, eggs, parsley, and bread crumbs. When the veggies are done add them to the meat mixture. Thoroughly mix all ingredients together. Then form into a loaf and put in to a rectangular baking pan with 2 inch sides. *If you don’t have a meatloaf pan (I didn’t when I first made this recipe) just form meat into a loaf shape and put onto a double sheet of tin foil and form the foil around the sides of the loaf. Basically you are making a pan for the meat. It works great. Finally cover with the remaining ketchup and bake in the oven for 1 hour.
It’s really good served with mashed potatoes!
